Origin, cultivation and use of the Enoki mushroom
Because it is frost-resistant and thrives in cool regions during the winter, it is also known as the winter mushroom and snow mushroom. In Japan, it is also known as enokitake. In the wild, the enoki bears yellowish to reddish-brown caps with a diameter of up to ten centimeters. The velvet foot fungus is native to cool and temperate regions of the Northern Hemisphere, where it grows wild, primarily in winter, on dead wood, but also on living deciduous trees. The use of the enoki has a long tradition, particularly in China and Japan: It was cultivated not only as a medicinal mushroom, but above all as an edible mushroom in China, for example, as early as the 9th century. But it is also increasingly used in Europe, although here (still) primarily as a medicinal mushroom. After all, the enoki has been known for its beneficial qualities in Asia for centuries!
What do enoki mushrooms taste like?
As an edible mushroom, the enoki mushroom, with its mild, sweet flavor, is an essential part of Asian cuisine. There, it is often eaten raw in salads—its sprout-like consistency makes it a real delicacy uncooked.
Enoki in the kitchen
Because of the delicate growth of commercially available Enoki mushrooms, they are also ideal for preparing healthy quick meals: The Enoki only needs to be boiled or fried for one minute.
Ingredients of the Enoki mushroom
The importance of the velvet foot mushroom as a medicinal mushroom has been steadily increasing in Europe for several years. In addition to its high content of mushroom-typical polysaccharides, its content of various B vitamins, and a small amount of vitamin C, it is the subject of scientific research primarily because it contains the two characteristic protein compounds flammin and velin.
