Origin, cultivation and use of the Hericium mushroom (Lion's mane)
In China, where the Hericium erinaceus mushroom is considered a delicacy due to its delicious aroma, it is known as the "monkey head mushroom." Other common names include "pom-pom," "yamabu shitake," and "lion's mane." Caution: The Hericium erinaceus mushroom species should not be confused with its close relative, Hericium coralloides, or "branchy hedgehog mushroom." The Hericium erinaceus mushroom species is widespread throughout the world, including Europe. The mushroom colonizes the wounds of deciduous trees. It rarely grows in the wild these days, but it is easy to cultivate. It was first cultivated in Shanghai in the 1950s. In China, the hedgehog mushroom is not only a sought-after edible mushroom, but also has a firm place in traditional Chinese medicine. Meanwhile, other countries are also benefiting from the positive experiences made in China with the Hericium mushroom: The hedgehog's beard is now cultivated all over the world, including in Germany, where it is used primarily as a food supplement.
Ingredients of the Hericium mushroom (Lion's mane)
The protein of the hedgehog's beard contains all eight amino acids essential for humans. It also contains valuable polysaccharides and polypeptides, as well as a high potassium content. Other components of the hedgehog's beard mushroom include vitamins B1, B2, B3, and B5, vitamin D, calcium, iron, copper, and selenium. The protein content of Hericium erinaceus is 31%. Due to this high nutrient density, Hericium is frequently used as a medicinal mushroom. The delicate, intense aroma of the hedgehog's beard is created by 32 different substances—far more than those found in many well-known edible mushrooms, such as button mushrooms or oyster mushrooms.
