Antarctic krill (Euphausia superba) is a shrimp-like invertebrate crustacean and lives in large swarms in the Southern Ocean of Antarctica. The crustaceans feed on diatoms and plankton and can grow up to 6 cm in length.

Due to its high content of health-promoting ingredients, krill oil has been approved by the EU Commission as a novel food for use in food supplements and dietary foods. Krill oil contains the valuable long-chain omega-3 fatty acids eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), which are polyunsaturated fatty acids.

Omega-3 fatty acids contain several double bonds in their carbon chain. One of these double bonds is located at the third carbon atom from the methyl end (hence omega-3) of the fatty acid molecule.

EPA and DHA perform important functions in the human body. They contribute to normal heart function and can reduce the risk of cardiovascular disease. They are very important for maintaining normal blood triglyceride levels. Omega-3 fatty acids are important starting materials for the formation of eicosanoids (hormone-like substances) and are concentrated in the human body, especially in the brain. EPA and DHA are conditionally essential, meaning they can only be produced in the body from the essential fatty acid alpha-linolenic acid, which is found in certain vegetable oils. However, the amount of EPA and DHA produced in the body is usually too small to ensure an adequate supply of these two important fatty acids. Therefore, EPA and DHA should also be obtained through food. Fatty fish are the only significant source of DHA and EPA in the human diet. However, the average consumption of these omega-3 fatty acids is too low for many people due to insufficient fish consumption, which should include at least two fish meals per week. In addition, high fish consumption is not always safe due to the heavy metal contamination of long-lived fish species. Strict vegetarians, in particular, should pay particular attention to ensuring adequate intake. The ratio of omega-6 to omega-3 fatty acids ingested through food must also be considered, as omega-3 and omega-6 fatty acids compete with each other for incorporation into cell membranes.

Most of the time, the proportion of omega-6 fatty acids in our diet is disproportionately high. According to the German Nutrition Society (DGE), the ratio should be 5:1; in reality, it is usually 7:1 or higher. Pregnant women have an even higher need for DHA and EPA, as the fetus requires particularly high levels of omega-3 fatty acids for brain development. As mentioned above, EPA and DHA are found in many fatty fish.

Unlike fish oils, the omega-3 fatty acids contained in krill oil are bound to both triglyceride and phospholipid molecules. Krill oil also contains the carotenoid astaxanthin.
