A large part of our immune system is located in our small and large intestines, the so-called intestinal immune system. This is where valuable nutrients, as well as vitamins and minerals, are absorbed from food, which are needed for a functioning immune system.

On the one hand, the intestinal flora is a veritable antigen reservoir, and on the other hand, it is here that numerous valuable nutrients, as well as vitamins and minerals, are absorbed from food that are needed for a functioning immune system. For these nutrients to be optimally utilized, countless enzymes are required to transport these substances through the intestinal wall, the enterocytes, and convert them or transform them into an active form. Only then can the individual building blocks be transported via the blood to the required organs and tissues, where they can fulfill their function.

There are specialized enzymes for every food component. Amylases, for example, are responsible for breaking down carbohydrates into monosaccharides. Protein, on the other hand, is broken down into individual amino acids by trypsin and chymotrypsin. Enzymes contribute to optimal digestion, thus relieving the digestive system and allowing the body to channel its energy into other systems. These enzymes are also found in a wide variety of foods. It is important to note that they begin to break down and are thus destroyed when heated above 40 degrees Celsius.

The intestinal flora, which in a healthy intestine consists of over 100 trillion bacteria, also plays a significant role in the immune system. The number of these bacteria decreases with each year of life; the use of antibiotics in particular has a negative impact on the intestinal flora. Fibers such as inulin support the intestinal flora in two different ways. On the one hand, they serve as food for the healthy intestinal flora and thus have a positive effect on its reproduction. On the other hand, they are fermented in the large intestine into short-chain fatty acids, which lower the pH value in the large intestine, thereby increasing the solubility of many minerals and vitamins, allowing them to be better absorbed through the intestinal wall. Inulin can be found in foods such as Jerusalem artichokes, chicory, onions, and artichokes.
